(Ripe) Plantain Millet Waffles


Ingredients:

  • 3 Ripe Plantains

  • 1 tsp pure Vanilla extract

  • 1 tsp Ceylon Cinnamon

  • 1 tsp ground Cardamom

  • 1 Tbl Coconut oil (extra virgin and unrefined is best)

  • 1/2 Cup Millet flour

  • 1/4 tsp Himalayan pink salt


Method:

  1. Blend the plantain, spices, vanilla, salt, and coconut oil until smooth, then transfer to a mixing bowl.

  2. Fold in the millet flour and combine well.

  3. Get your waffle maker ready and scoop a bit of the batter on (depends on your size waffle maker). Add a sprinkle of hemp hearts (or you can add seeds, nuts, chocolate chips, or raisins)- anything you like.

  4. Serve with your favourite waffle toppings and enjoy!
