Coconut Rose Tahini Cookies- A floral delight!
Ingredients:
1 1/4 Cups unbleached organic Flour
1/3 Cup Coconut sugar
1/2 tsp ground Cardamom -
1 - 2 Tbl Cocoa nibs
1/2 tsp Baking powder
1/2 tsp Baking soda
1/4 tsp Himalayan pink salt
1/2 Cup grated Coconut
1/3 Cup Coconut milk
3-4 Tbl dried Rose petals
1 tsp Pure Vanilla
2 Tbl Tahini
1/3 Cup virgin Coconut oil
Dark chocolate blocks for topping (optional)
Method:
Add the flour, coconut sugar, baking powder, baking soda, salt, and cacao nibs to a mixing bowl and whisk to combine.
Heat coconut milk on the stove with rose petals and cardamom until warm. Remove from the heat, then add it to the dry ingredients.
Fold in the coconut oil, grated coconut, and tahini. Continue to mix until it forms a dough. You can use your hands to do this.
Scoop the cookie batter on a baking tray and gently press each scoop. Top each one with a block of dark chocolate.
Bake in a preheated convection oven at 350°F for 12-14 minutes
Enjoy with a lovely cup of rose coconut chai.
Note that you can customize the ingredients to your taste and liking. You can sub the rose petals and cacao nibs for raisins, or dark chocolate chips- anything you like.
