This thick, savoury and sweet soup is so delicious and nourishing! It contains all 6 tastes, balanced ingredients, hearty textures, and a whole lotta LOVE!
I adore plantain in my soups. Have you tried it?
Ingredients:
2 Cups Sweet potato cubes (wash and peel sweet potato beforehand)
2 Cups finely chopped Bodi (or string beans)
1 Cup chopped/ sliced Okra
3 Ripe Plantains (peeled and cut into thick slices)
1/4 Cup chopped Pimentos (plus 1 whole pimento studded with whole cloves)
1/3 Cup chopped Chive
2 Tbl Coconut oil
1 1/2 tsp Garam Masala
1 1/2 tsp Ginger powder (or fresh grated ginger)
1 1/2 tsp whole Geera (cumin)
1 -2 tsp Himalayan pink salt
1/4 Cup grated Coconut
1/3 Cup Coconut milk
1 1/4 Cup Water
Method:
Place a stockpot on medium heat, then add coconut oil.
When the oil is warm, add the pimentos, chive, ginger, garam masala, and geera. Stir and allow to cook until fragrant.
Add the okra and stir to combine with the seasonings. Allow the okra to cook for a minute.
When it starts bubbling, add the sweet potatoes, bodi, grated coconut, water, coconut milk, and whole pimento studded with cloves. Give it a stir, then cover the pot and allow it to cook for 6-8 minutes.
Remove the cover and add the plantain. Cover again and allow to cook for 5 minutes.
Remove from heat and serve with fresh herbs, chili infused coconut oil, crackers, and microgreens
