Easy Easter Cookies

Couldn't go hopping around for easter goodies this year? Try my sweet potato cookie recipe that's easy to make and decorate for an Easter themed treat. Better yet, you can get the family together on a hunt for their favourite toppings.

Topping Tips


Use what's packed in your pantry right now and get creative with decorating these cookies. Here's what I found on the hunt for toppings in my pantry.


Note: These are approximate measurements that can be adjusted to taste.


Ingredients


1/4 C Chocolate chips

1 tsp coconut oil

1/4 C Coconut flakes

3 Tbl Toasted coconut flakes

3 Tbl Sprinkles

3 Tbl Peanut butter

1/4 C Homemade granola

1/4 Icing sugar


Method


  1. Place chocolate chips and coconut oil in a microwaveble bowl or use the double boiler method for melting. Microwave the chocolate chips for 15 minute increments stirring each time until silky and smooth.

  2. In another bowl, add icing sugar and 2 Tbl of water or more if needed, stirring to create a smooth and thick spread. Heres a tip: Always make sure to add liquid to icing sugar, never add icing sugar to liquid. The latter ends up using a lot more icing sugar to get the right consistency.

  3. Place all other toppings in their own bowls or dishes and get ready for dipping and sprinkling.

  4. Spread your cookies with the melted chocolate, peanut butter and glaze for your base. Then dip or sprinkle with remainder of ingredients.
