Cheesy Garlic Orange Roasted Beets with Pecans & Parsley


Sweet, savoury and crunchy!

This scrumptious dish will have your tastebuds going wild. It's easy to make, and with just a few ingredients you'll be surprised at the delicious layers of flavour created here.

With layers of: orange, garlic, beets, pecans, maple syrup and cheese. Oven roasted until the cheese is bubbling and melted. The pecans, are roasted and coated in the sticky, sweet, garlic oil.

It was simply delightful watching this dish come together.

I served the roasted beets on a bed of arugula and Kale with orange wedges, extra cheese and pecans.

I am always amazed by beets. I think it's one of the most beautiful vegetables where its colour shows; that it's rich and potent in vitamins and essential nutrients. What makes it even better are; beets are sweet, earthy and delicious. You can use them in so many ways.

Ingredients


  • 3 Small- Medium Beets, thinly sliced into rounds

  • Vegan Provolone Cheese Slices

  • 1/2 Orange, juiced

  • 3 Tbl Garlic Infused Coconut Oil https://cgacaribbean.com/

  • 2 Tbl Maple Syrup

  • 1/2 Cup Chopped Pecans or sub for walnuts

  • 1/2-1 tsp Onion Powder

  • 2 tsp- 1 Tbl Parsley Flakes

  • 1/2-1 tsp Salt


Method


  1. Preheat oven to 350°F.

  2. Layer slices of beets and provolone cheese in a baking dish.

  3. In mixing bowl, add garlic infused coconut oil, orange juice, maple syrup, salt and onion powder. Whisk until fully combined.

  4. Add chopped pecans and fold into the mixture until properly coated.

  5. Evenly pour the mixture over the beets and cheese, then sprinkle with parsley flakes.

  6. Cover and bake in the oven for 12 minutes. Remove cover and bake for additional 15 minutes.

  7. Remove from the oven and allow to sit for a few minutes before serving.


Serving Tips: Serve as a side dish or on a bed of greens with orange wedges, extra pecans and cheese.
