Carrot- Ginger- Coconut Soup

Warm and comforting, this Ginger spiced carrot soup is served with sweet and crunchy Coconut Pecan Clusters, and Crispy 'Bacon'. Every spoonful is magical and delightful. I even added some extra spice with a drizzle of chilli oil to the top when serving.

Carrot- Ginger- Coconut Soup


Ingredients

  • 2-3 Tbl Garlic infused coconut oil

  • 9 Cups sliced Carrots (roasting optional)

  • 2 inches Ginger (sliced or grated)

  • 2 Tbl Minced Garlic

  • 1/2- 1 tsp Turmeric

  • 1/2 tsp Cinnamon

  • 4 Cups Vegetable Stock (unsalted)

  • 1 Cup Coconut milk (or non dairy milk of choice)

  • Salt to taste


Method

  1. Heat the garlic oil in a pot on medium high heat, then add the garlic, ginger, turmeric and cinnamon. Stir frequently until fragrant then, add the carrots and stir to combine with the garlic and ginger spices. Note: You can roast your carrots beforehand with coconut oil and spices, then add to your pot with liquids, simmer then blend. This method can enhance the flavour profile of the soup. (I was short on time so I skipped this step).

  2. Pour in the vegetable stock, give it a stir then cover and reduce your heat to a simmer. Cover and simmer for 15 minutes until the carrots are tender.

  3. Turn off the heat and blend with an immersion blender (or transfer to a blender) blending until everything is smooth and creamy.

  4. Serve with a generous topping of Coconut Pecan Clusters and Crispy 'Bacon' and a drizzle.of chilli oil. See below for the recipe.


Crispy 'bacon'

Ingredients

  • 5 strips vegan Bacon, chopped

  • 2 tsp Coconut Oil

  • Pinch of Salt

  • Dash of Coconut Sugar (optional)


Method

  1. Add coconut oil to a pan on medium heat. The add the chopped bacon.

  2. Stir and cook until the bacon pieces are golden and crispy.


Coconut Pecan Clusters

Ingredients

  • 1/2- 1 Cup Chopped Pecans

  • 2 Tbl Coconut Oil

  • 1/4 Cup Coconut Sugar


Method

  1. Using the same pan on medium heat, coat with coconut oil, then stir in the coconut sugar.

  2. When the coconut sugar melts into the oil, add the pecans and mix together until evenly coated.

  3. Toss frequently until toasted, evenly coated and sticky.

  4. The sugar will harden quickly, creating the most delicious crunch and pecan clusters.
