Butterfly Pea Banana-Coconut Pancakes

BLUE-TIFUL, SCRUMPTIOUS & NUTRITIOUS!

Did you know that Butterfly Pea Powder, (which comes from the Butterfly Pea Flower) is loaded with health benefits? This flower has been grown and used in Asia for a long time, typically for its health benefits. It contains many antioxidants and healing properties.

Used for weight loss, blood sugar control, and improving hair and skin health. Butterfly Pea can also enhance and boost your mood and help with insomnia and anxiety. Nature Sprout TT is a local (Trinidad and Tobago) company that grows organic butterfly pea flowers and turns it into powder. It's all natural and great for using in a variety of recipes. Butterfly pea flowers and powder are usually used for making teas, but there's so much more you can do it with this magical and medicinal flower.

I had fun this morning experimenting with Butterfly Pea P0wder in our pancakes!

Fun fact: Gaia and Arius wanted pancakes for breakfast, but I was all out of dairy-free milk which is usually necessary for making pancakes. I came up with an idea to make "banana milk" instead and it worked perfectly! I couldn't believe how soft and fluffy they turned out! This was so simple and quick to make. Breakfast was scrumptious!

Ingredients -1 1/2 Cup organic all-purpose flour -2 tsp Butterfly Pea Powder -2 tsp coconut sugar -1 tsp baking powder -Pinch of Himalayan salt -1 tsp organic vanilla -1 1/2 Cup filtered water -3 Tbl grated coconut (or coconut flakes) -1 Cup sliced bananas -1 Tbl virgin coconut oil

Method 1. Add flour, baking powder, butterfly pea powder, coconut sugar and salt to a bowl and whisk to combine. 2. Add bananas, water, vanilla and grated coconut to a blender and blend until smooth. 3. Pour the creamy mixture and coconut oil in the bowl with dry ingredients and whisk to combine. 4. I topped this scrumptious stack with an apple sauce. I used apple flour/ sugar and water and cooked it on the stove on low heat until the sugar melted, and the sauce thickened.
