Beet & Chocolate Baked Oats - dairy free & healthy, vegan breakfast

Earthy, decadent, and sweet! This is a special breakfast that looks and tastes like love.

Beets and chocolate are delicious together, and this beautiful combo of flavours and textures are sure to melt your heart!

Chocolate Baked Oats


  • 1 1/2 Cup Oats

  • 1/3-1/2 Cup Chopped beets

  • 1 Ripe banana

  • Pinch salt

  • 1 Cup Oat Milk (or sub for coconut milk)

  • 1 1/2 tsp Baking Powder

  • 1/2 tsp Vanilla (optional)

  • 1/4 Cup Chocolate Chips and more for topping.


  1. Preheat your oven to 350ºF

  2. Add everything (except the chocolate chips) to a food processor or blender, and blend until creamy and only small pieces of beet remain.

  3. Fold in the chocolate chips.

  4. Lightly grease ramekins or baking dish and bake, add the batter, top with more chocolate chips and bake for 22-25 minutes.

  5. Remove from the oven and allow to cool slightly before serving. You can make these extra special with a topping of coconut yogurt, ice cream or nut butter.
