For The Stewed Tomato & Okra Lentils
Ingredients
1 Can Lentils, drained and rinsed
5 Small Tomatoes, rough chopped
2 Okra, chopped
2 Pimentos, chopped
1/4 Cup Red Onion, large dice
1 tsp Paprika
1/2 tsp Salt (adjust to taste)
1/2 Cup Coconut Milk
2 tsp - 1 Tbl Coconut Sugar
1 Tbl Butter- I used @countrycrock Plant Butter
Method
Add tomatoes, okra, pimentos, onion, paprika, salt and coconut milk to a food processor, and blend until it becomes a smooth sauce.
Add plant butter or coconut oil to a heated pot on medium heat.
Pour In the sauce and coconut sugar, and cook for approximately 5- 8 minutes, stirring frequently.
Now, stir in the lentils and cook for approximately 2 minutes. Note: You can add 1/4 C water if the stew seems too thick.
For The Lemon- Parsley Cauliflower "Rice"
Ingredients
1 Small Cauliflower, cut into florets
1/2 C Fresh Parsley, roughly chopped
2 Pimentos, chopped
1/2 tsp Turmeric Powder
1 tsp Salt (adjust to taste)
1/2 tsp Onion Powder
1/2 Lemon, Squeezed
Method
Add all ingredients except the lemon juice to a food processor and pulse until a medium- fine meal, resembling rice grains, is formed.
Heat a pan on medium- low heat and add butter or oil.
When the butter or oil is heated, toss in the cauliflower rice. Stir and add the fresh lemon juice, stirring frequently, cook for approximately 2-5 minutes until the cauliflower is tender.
