🍃Pumpkin Marinara- A super simple🥣 sauce, made from a flavourful blend of roasted pumpkin, 🍅 tomatoes, 🍃basil and ☘parsley. It's a delicous, creamy sauce that can be used in a variety of 🍽 dishes.
Plus, it's a 🌱healthier alternative to pre-packaged pasta sauces.
This Pumpkin Marinara contains lots of nutrients like,🌱Antioxidants, Vitamin A , Folate, Potassium and Vitamin K.
Yield 4 Cups
4 C Pumpkin medium diced
4 Medium Sized Tomatoes diced
6 Garlic cloves smashed
2 Tbl Fresh Parsley roughly chopped
8-10 Fesh Basil Leaves roughly chopped
1 Tbl Paprika
2 tsp Salt
1/2 C Coconut oil I used Simply Natural from https://cgacaribbean.com/
Preheat oven to 360°F.
Add all the ingredients to a roasting pan and toss to evenly coat the pumpkin and tomatoes.
Cover and pop in your preheated oven for 40 mins. Then remove cover and broil for 2 minutes.
Remove from the oven and puree the ingredients with an emersion blender until smooth or you can transfer to a blender to puree.
Serve over your favourite pasta with a sprinkle of fresh herbs.
Note: Leftovers can be stored in an airtight container for up to 3 days or kept frozen for up to 2 months.
