Tofu Scramble- Silken Tofu, Mushrooms & Tomatoes

  • 2 tsp Garlic Infused Coconut Oil

  • 2 Packs Extra Firm Silken Tofu

  • 1/2 Cup Diced Onions

  • 3 Small Tomatoes, diced

  • 2 Cup Sliced Mushrooms

  • 1 Tbl Nutritonal Yeast

  • 1 tsp Turmeric

  • 1 tsp Black Salt, optional (this gives the scramble its 'eggy' taste)

  • 1 tbl parsley flakes

  • 1 tsp paprika

  • 1/2 - 1 tsp Onion Powder

  • Black pepper and salt to taste


  1. Heat a pan or skillet on medium heat, then add coconut oil (evenly coat the pan with the oil).

  2. Toss in the diced onions, and saute for a minute, then add the seasonings (except the black pepper and salt). Stir to properly combine with the onions and cook for another minute.

  3. Now, add the sliced mushrooms and diced tomatoes. Stir and cook for approximately 2 minutes.

  4. Add the silken tofu and mash with your spatula until broken into smaller pieces. Cook and scramble for approximately 5-8 minutes, stirring periodically.

  5. Sprinkle with a generous amount of black pepper and salt, stir, and remove from heat. Allow the scramble to sit and cool for a few minutes before serving. This helps to properly infuse the tofu with the seasonings.
