Sweet Potato Galette

Sweet & Savoury Sweet Potato Galette

Trust me when I say that this recipe is EASIER than pie!! Made with simple, wholesome ingredients so that you can properly indulge! This galette is decadent and not too sweet, the crust and whipped feta topping adds a touch of savoury that pairs deliciously with the sweet potato filling. The smell of this pie baking in the oven will warm your heart and fill you up with holiday cheer!


You can adjust the sweetness and flavours of this recipe to your preference. And if you're not a fan of the tangy taste of feta you can substitute with cream cheese.

This rustic Sweet Potato Galette is ideal for sharing at any holiday event! You can also make mini versions if you like



The Crust

  • 1 1/2 Cups organic unbleached Flour

  • 1 1/2 Tbl Coconut Sugar

  • 1/4 tsp Himalayan pink salt

  • 1/4 Cup Coconut Oil

  • 1 tsp Lemon Infused Coconut Oil

  • 1/4 Cup + 1Tbl Ice cold water

  • Non dairy milk for brushing

  • Coconut sugar for sprinkling on the edges

Method

  1. Add the dry ingredients to a bowl and whisk to combine.

  2. Pour in the coconut oil and lemon infused oil and fold with a spatula to combine. Add the ice-cold water and use your hands to gently knead and incorporate all of the ingredients. Form a ball with the dough then add to a lined cast iron pan or baking dish. Press with your hands to flatten the dough on the bottom of the pan and up the sides.


Sweet Potato Filling

  • 4 Cups Cubed Sweet Potato (boiled and strained)

  • 1/2 tsp Cardamom powder

  • 1/4-1/2 tsp grated Nutmeg

  • 1 tsp grated Cinnamon (or cinnamon powder)

  • 1/2 tsp Turmeric Powder

  • 1/2 tsp Ginger powder

  • 1/2 Cup unsweetened Almond milk (or any non-dairy milk of choice)

  • 1/4 Cups Coconut Sugar

  • Pinch of Himalayan Pink Salt

Method

  1. Add all the ingredients to a blender and blend until smooth.

  2. Fill your prepared galette with the creamy sweet potato, fold the edges of the dough over the filling, then brush the dough with milk and sprinkle with coconut sugar.

  3. Bake in a preheated convection oven 400ºF for 40 minutes. Remove from the oven, allow to cool for a few minutes before topping with your sweetened whipped feta.

Whipped feta topping

  • 1/2 block of Violife Greek White (or substitute with vegan cream cheese)

  • 1/2 - 2 Tbl Honey or Agave

  • 1/4 Cup Almond milk


Method

  1. Add all ingredients to a mixing bowl and whip with a hand mixer. Chill in the fridge for a few minutes before topping your Galette.
