Nutrient-dense and delicious Sunflower Seed Hemp Pesto. This pesto is quick and easy to make and can be a nutritious addition to a variety of meals.
For lunch, I mixed it into basmati rice and served it with plantain and arugula. For dinner, we had it with baked sweet potatoes and microgreens. It's also perfect for pasta, pizzas, roasted vegetables, or served as a dip.
Here's the recipe. You can adjust the flavours and herbs to your preference.
Ingredients:
1 Cup Sunflower seeds (soaked overnight, drained and rinsed)
3 Tbl Hemp hearts
1 Cup fresh Cilantro
2 tsp fresh Lime or Lemon juice
1 tsp Paprika
1-2 tsp Himalayan pink slat (adjust to taste)
3/4 Cup extra virgin Olive Oil (plus more for serving)
1/4 Cup Water (more if needed)
Method:
Add everything to a food processor and blend until smooth (or to your desired texture).
Serve with baked sweet potatoes, microgreens, olive oil, and a squeeze of lime juice for a wholesome and nourishing plant-based meal!
