Being a mom, wife, and entrepreneur, means my days are usually busy with lots of different things happening simultaneously.


Today we're hitting the reset button.


Reflecting on quarantine (lockdown)~

I felt it was a time where my family and I were able to reconnect and reset. Although we all had our meltdowns at some point, and I still had all of my usual household chores. Things somehow felt easier and a lot less stressful, not having major commitments for work and being able to spend quality time with my kids and husband. Having my husband at home also meant I had extra help with the kids, which was great.


Our mornings were spent in the garden. Gaia and Arius would play while I tried to fit in a workout and then we would all go for a swim. For me, this was the best way to start the day.


Quarantine also gave me the time to finally focus and develop my blog, while having lots of fun testing recipes and experimenting with new flavours and combinations.


However, since getting accustomed to (the new) normal, I find that we frequently are feeling overwhelmed and too busy. So today, we're taking the time to enjoy the moment, and incorporate some of our quarantine routines back into our days.

Aloe Vera- Pineapple Slushie


Ingredients

  • 2 Tbl Lemon Juice

  • 6-8 Mint leaves

  • 1-2 Tbl Agave (adjust to taste)

  • 2 Cup Pineapple Juice (unsweetened)

  • 2 Cup Ice

  • 3 Inches of Aloe Vera Leaf Gel (skin removed)


Method


  1. Add all of the ingredients to a blender and blend until the ice is crushed to small bits.

  2. Pour and serve, garnished with fresh mint leaves.
