Oven- Roasted Cauliflower- Moroccan Style

These Cauliflower bites are bursting with flavour! They're Coated in a delectable creamy marinade made from vegan mayo, lemon, bell peppers, turmeric, parsley, then roasted in the oven until perfectly tender with crisp edges.   • 1 Head of Cauliflower cut into florets

  • 1 Bell Pepper diced

  • 2 Tbl Lemon Juice

  • 1 Tbl Parsley Flakes

  • 1/4 C Vegan Mayo- I used @followyourheart

  • 1/2 tsp Turmeric- I used @simplyorganicfoods

  • 1 tsp Paprika

  • 3 Garlic Cloves

  • 1 tsp Salt

  • 2 Tbl Coconut Oil- I used @cgacaribbean

  1. Preheat oven to 400°F

  2. Blend all ingredients except the cauliflower in a food processor until smooth.

  3. Using a mixing bowl, pour the marinade over the cauliflower florets and toss, making sure they are evenly coated.

  4. Place the coated cauliflower on a lined baking dish.

  5. Pop in the oven and bake for approximately 25 minutes, flipping them half way through the baking time.

  6. Remove from oven and serve fresh lemon wedges and parsley .
