Mexican- Inspired Tofu Fajitas, With Vegan "Sour Cream"

Who said tofu can be boring? Tofu can be seasoned or marinated with just about anything. It's super versatile and soaks up any flavours you add to it. This Mexican- inspired tofu is one of my favourite recipes! It's quick and easy to make and perfect for adding to fajitas, tacos, burrito bowls and salads. For a scrumptious and healthy lunch, I toasted fajitas and filled them with my Mexican tofu, grilled plantain, fresh tomatoes and cucumbers, and drizzled with homemade vegan "sour cream". Mexican Tofu


Ingredients

  • I Block Extra Firm Tofu- I used Extra Firm Organic Tofu from @housefoodsamerica


Marinade

  • 1/4 C Garlic Coconut Oil- I used Infused Garlic Oil from @cgacaribbean

  • 1 tsp salt (adjust to taste)

  • 1 tsp Geera (Cumin)

  • 1/2 tsp Smoked Paprika

  • 1/2 tsp Paprika

  • 1 tsp Oregano

  • 1 tsp Onion Powder

  • 1/2 tsp Chili Powder (optional)

  • 1 tsp Lemon Juice (optional)


Method


  1. Preheat oven to 365°F.

  2. Place tofu on a cutting board and cut into slabs of approximately 1/2 inch thick.

  3. Lay a kitchen towel on a flat surface with bounty paper towels on top. Then place your slabs of tofu in single rows.

  4. Fold over the towel and paper towel over the tofu and press firmly on each piece to remove the excess liquid. Note: Make sure not to press too hard that the tofu gets smashed.

  5. Remove the pressed tofu and stack on top each other. Then cut them into 1/2 - 1 inch cubes.

  6. Place the cubed tofu pieces into a bowl.

  7. In a separate bowl add all the marinade ingredients and whisk to combine.

  8. Pour marinate over the tofu and fold gently with a spatula to evenly coat the tofu. Note: If you have some time you can leave the tofu to marinate for an hour or more, but it's not essential.

  9. Place the marinated tofu in a baking dish, leaving space between each piece of tofu to ensure even baking.

  10. Pop in the oven and bake for approximately 30 minutes until golden brown.



Sour "Cream"


Ingredients


  • 1/4 Cup Vegan Mayo- I used Veganaise from @followyourheart

  • 3 Tbl Chadon Beni or Cilantro roughly chopped

  • 1 tsp Apple Cider Vinegar

  • 1/2 tsp Onion Powder

  • Salt to taste


Method


  1. Add all ingredients to a bowl and mix to combine.


Serving Tips: Using store bought or homemade fajitas, layer them with grilled plantain, freshly diced tomatoes and cucumbers, mexican tofu and vegan "sour cream" with a squeeze of fresh lime.
