Maple Pecan Baked Cheese- Made with Tofu, Cashews & Vegan Sour Cream

Creamy, wholesome & delicious- made from a blend of tofu, cashews, and vegan sour cream.

This creamy, baked cheese is super easy to make, healthy, and perfect for serving as a meal, appetizer, or on a grazing platter. You can also toss it with cooked pasta, turn it into a Lasagna, scalloped potatoes and more.

Ingredients

Cheese

  • 1 Block Extra Firm Silken Tofu

  • 1/2 Cup Cashews, soaked overnight, then drained and rinsed

  • 1 Tbl Apple Cider

  • 3 Tbl Nutritional Yeast

  • 1/4 Cup Vegan Sour Cream

  • 1 1/2 - 2 tsp Salt


Toppings

  • 1/2 Cup Chopped Pecans

  • 1 Small Apple, diced

  • 2 Tbl Maple syrup


Method

  1. Preheat your oven to 350ºF.

  2. Add all the cheese ingredients to a food processor and blend until smooth and creamy.

  3. Transfer to a baking dish and evenly spread. Top with chopped pecans, apples and drizzle with maple syrup.

  4. Pop in the oven and bake for 20-25 minutes. Remove and served with bread, crackers, veggies or any of your favourites.
