Hearts Of Palm Ceviche - Super fresh and tasty, and perfect for sharing and snacking!

1 Can Hearts Of Palm- @rolandfoods
1/4 C Red Onion, finely diced
2 Tbl Chandon Beni, or Cilantro chopped
Salt to taste
1 Lemon, Squeezed
2 Pimentos, or chilis or jalapenos finely chopped
1Small Tomato, small diced
1 Cucumber, small cubed
1 tsp Paprika
1 tsp Parsley Flakes
Drain the can of hearts of palm and chop or slice them into small pieces.
Add all ingredients to a bowl and mix to combine.
I served this ceviche with baked sweet potato chips.
