Healthy Tofu Scramble

Tofu is a nutrient-dense food made from soy milk. It's high in protein, calcium and manganese, and contains all of the essential amino acids that our body needs.

For a nutritious start to your day, try this delicious Tofu Scramble recipe that's packed with veggies and flavour.

  • 1 Pack Silken Tofu (light or firm) - I use Morinu Silken Tofu

  • 1/2- 3/4 C Mushrooms sliced

  • 1/2 C Bell Peppers medium diced

  • 1/4 C Chive chopped

  • 1/2 C Onion medium diced

  • 3 Garlic Cloves finely diced

  • 1 Tbl Nutritonal Yeast

  • 1 tsp Himalayan Black Salt (Kala Namak)

  • 1 tsp Paprika

  • 1 tsp Salt

  • 1/2 tsp Onion Powder

  • 1 Tbl Vegan Butter- I use Country Crock Plant Butter

  • Black Pepper to taste

  • 1/4 tsp Turmeric- optional. Add for a more realistic scrambled "egg" colour.


  1. Add the butter to a nonstick pan on medium heat.

  2. As the butter begins to melt, add the onions and garlic. Stir and saute until fragrant.

  3. Then add the diced bell peppers and mushrooms. Stir and saute for 1-2 minutes.

  4. Add the tofu and mash into the pot using your spoon or spatula. Stir and cook for another 1-2 minutes.

  5. Then toss in the chopped chive and remainder of seasonings. Stir and cook for 2-5 minutes until the bell peppers are tender and the tofu is cooked.

  6. Remove from heat and serve with your favourite bread or side of avocado and tomatoes.
