A healthy, guilt free dish that features extra firm organic tofu, marinated in a tangy and flavourful blend of capers, parsley and garlic. The zesty seasoned tofu is then grilled until it's perfectly crisp, and served on a bed of fresh kale and cucumbers. This tofu recipe is a must to try! Yield 2 Servings
1 Block Extra Firm Tofu- I used @housefoodsamerica Extra Firm Organic Tofu
6 Garlic Cloves
2 Tbl Parsley Flakes
2 Tbl Capers
1/2 Cup Coconut Oil- I used @cgacaribbean Simply Natural Coconut oil
1 tsp Paprika
Salt to taste (the capers are very salty on their own so this dish can also be made without adding salt)
Add all the marinade ingredients to a food processor and blend to combine.
Cut your tofu in slabs of approximately 1/2 inch thick.
Lay a kitchen towel on a flat surface with bounty paper towels on top. Then place your slabs of tofu.
Fold over the towel and paper towel over the tofu and press firmly on each piece to remove the moisture. Note: Make sure not to press too hard that the tofu gets smashed.
Remove the pressed tofu and place in a tray or plate and rub both sides of the tofu with the caper marinade.
Cover and let it sit for approximately an hour, allowing the tofu to properly absorb the marinade.
Heat a cast iron grill or pan to medium heat and generously coat with coconut oil.
Place each slab of seasoned tofu on the grill and let it cook for approximately 5 minutes on each side until the tofu is golden brown and crisp.
Serving Tips: Reserve any bits of marinade left over from the dish that the tofu was seasoned in. Add the left over marinade to a bowl with a drizzle of coconut oil and squeeze of fresh lemon juice. Whish together to combine and pour over the cooked tofu. Serve on a bed of fresh kale and cucumbers with an extra sprinkle of capers.
