A super easy method for making small batches of granola.
See below to see how I made this granola on the stove for a quick and wholesome breakfast. You can also customize this recipe by adding or switching for a variety of dried fruit, nuts, seeds, grains or sweetener of choice.
- 1 Cup Oats
- 1 Cup Slivered Almonds
- 1 Cup Desiccated Coconut (or shredded coconut)
- 1 Cup Pumpkin Seeds
- 2 Tbl Coconut Sugar
- 1 tsp Cinnamon
Pinch of Salt (optional)
- 1 Tbl Vegan Butter or Coconut Oil
Add all ingredients (except butter) to a mixing bowl and toss everything together.
Heat a large pan over medium heat. Add butter or oil to the heated pan and evenly coat pan with melted butter or oil.
Add the granola to the pan and toast for 5-8 minutes while continuously stirring until the oats, nuts and coconut are toasted, golden brown and fragrant.
Remove from heat and serve granola in a bowl with dairy free milk, or simply enjoy as a snack, or use for topping on smoothie bowls, porridge, salads, or combined in cookie dough and more.
Store granola in an airtight container or ziploc bag.
